Don Daniel is a delicately elegant microlot from Acevedo in Huila, Colombia, grown by Sergio Darío Aranda Gómez. The coffee is made from Red Bourbon, processed with a washed yeast-extended fermentation, and dried in the sun, allowing the flavors to develop with finesse.
In the cup, this coffee presents a striking rose-water aroma, accompanied by layers of pomegranate and soft floral complexity. Its sweetness is gentle but persistent, with hints of honey and delicate white peach notes.
Roasted to a medium-light level, Don Daniel retains its floral brightness and elegant clarity, making it ideal for filter methods like V60 or Chemex, though it also works beautifully in immersion brews such as French Press or AeroPress.
